The new E.E.C. Regulations on Food Safety came into force on the 1st. January 2006 and these significantly effect the way your

The old system was based on The Department of Health’s” Assured Safe Catering”. This system looked at the various stages of the journey food takes as it passes from delivery, storage, preparation, cooking, servicing and finally washing up and cleaning up.

This is to be replaced by the Food Standards Agency’s “ Safer Food - Better Business”. This system is much more focused on HACCPS and traceability. In fact all new EHO visits in the future will look for evidence of your hazard / risk assessment work.

At Alexander Jon Richardson & Associates we have employed an ex EHO to rewrite all our old Food Safety Manuals and to create a new Food Safety Policy Document to support the changes. All our existing clients now have the new documentation which includes in it’s 79 pages, very detailed risk assessments of all the common catering equipment we use in our kitchens. Also included is a complete set of proformas for all the forms that you need to complete such as temperature monitoring and a detailed cleaning schedule which is favoured by all EHO’s.
